Looks delicious!

Something very similar tomorrow. Beef short ribs had 24 hours in a serious dry rub, then 5 hours slow cooking. Juices and cooking liquor reduced with mustard, red and brown sauce and brown sugar to make the glaze ready for the BBQ tomorrow. To go with pork ribs - Chinese and sticky glazed, tandoori chicken, tiger prawns plus the obligatory burgers (home-made) and sausages. :grinning: I’ll leave Mrs S to knock up a salad or two. :wink:

We bought a set as a moving in gift to ourselves. The first time I used them in anger was prepping Xmas dinner. Carving a turkey with six fingers bandaged was not an experience I want to repeat

They do hold an edge very well… quality steel.

Its why I buy old sheffield steel chisels (50-60years old) as they sharpen and hold that edge for ages. to get the same quality tools these days you beed to spend £100 on a chisel

I have some older Sabatiers, which I sharpen on diamond wet stones and then hone with a standard steel

But fancy a few Globals at some point

I generally buy them and chuck ā€˜em out when they get blunt :wink:

Go fond a local second hand tool shop and get yourself some old steel… buy a decent set if wet stones and rejoice in the sharpness of it it all… OK so I need a sharp chisel ir two for the guitar making, (when given a perfect edge with the leather strop, I can shave with it):flushed::joy:

They look awesome. Trying to find an argument that will convince myself that the price can be justified and Mrs S that it’s a good investment. First part is relatively easy. :roll_eyes:
