I got my love of curry and Asian food during my second year at uni. I was in digs ( it was a different world then) run by a Malaysian lady who cooked the most amazing food. She also had an amazing daughter.

I updated the spice cupboard today. Next week is for making the Garam Masala, Curry Powder and the Mixed Powder. Next weekend hopefully Spice Stock and Base Sauce along with doing some pre-cooking of mutton and chicken.
Haven’t been looking forward to investing time in prepping for some good food in ages

Mine leans more towards Mex / Caribbean (as well as bog standard British / European) and the Indian spices don’t get used as much so go stale (& not as extensive- though there’s some good overlap in what I’ve bought today).
My own kitchen boasts an enviable selection of Vesta curries.
