Clod or divot?

To be clear. I am a committed meat-eater.

But, having received a fairly serious bollocking from my doctor, I’m reviewing my diet (and alcohol consumption).

It’s now red meat a max of twice a week and veggie at least twice. I wasn’t thrilled at the prospect but have to say the veggie Bolognese and chilli we’ve had this week were very good. Didn’t miss the meat.

And I hate to admit it but I’ve lost 3kg in the first week and have a load more energy.

Mushroom Stroganoff made with smoked paprika and coconut milk can be very very decent!

Recipe!

Please…

Serves 2
1 tablespoon of olive oil, 1 chopped onion, 2 cloves of garlic crushed or fine chopped, lots of sliced mushrooms, 250 ml veg stock (or could use bovril/marmite in hot water), tablespoon of tomato puree, 200ml red wine, two teaspoons of smoked paprika, 1 tin of coconut milk, pinch of mustard powder, salt & pepper to taste.

Heat the oil in a heavy saucepan, over medium heat fry the onions & garlic until transparent, add the mushrooms. Fry until softened and oozing liquid. Add red wine, stock, tomato puree, paprika, and mustard powder. Bring to the boil then simmer and let it reduce. Add the coconut milk and simmer for 20 mins. Adjust seasoning with salt and pepper (don’t really need much pepper). Serve with rice.
