Best meal of my life - this was my 14th Michelin 3 star and far and away the best. Gallery link below:

The slightly more detailed write up of the courses in order of the pics:

Noma Menu - 14/03/24

Meat from every part of the langoustine; plankton and fennel accompaniment (green bit round the edge of the plate) - served with an incredible sauce (in conch shell) and a broth that was drunk through the seaweed - number 2 dish of the night

Seaweed 3 ways with a consommé - palate cleanser

Effectively a mussel ratatouille with Japanese quince

Sea urchin with hazelnuts

Raw squid carpaccio laid over grilled koji with seeds - probably favourite dish of the night/my life

Cod roe waffle; this was basically a cod roe spam on a crisp with wasabi leaf, drizzle of chili oil and beech tree nuts (10/10)

Hand dived scallop served on its own roe with a berry accompaniment (dark bit round the edge of the scallop shell)

Cod tongue served on the bone - very juicy and rich

“Cod’s eye pie” crisp with horseradish, wasabi leaf, cod’s roe and a jelly in the middle made to resemble a cod’s eye (not actually an eye)

Cod’s throat in a parsley and garlic sauce topped with chives

Cod’s jaw topped with roasted pumpkin served on the jawbone

Barbecued burbot with butter sauce, served on a skewer whittled from a shell - number 3 dish for me

Hazelnut mousse and kelp tincture topped with caviar

“Sweet oyster” - not an oyster! Most inventive dish of the night; it’s gammeldansk ice cream, Japanese quince and seaweed. At the start of Ocean season, they made a mold of 100 different oysters to put the ice cream in so that everyone at the seating has a different one :exploding_head:.

Snøbrod - incredible Danish pastry on a seaweed skewer

Clam gel with a cherry centre

Wines - favourite of the pairings were the 2017 Tschida ‘Himmel auf Erden’ (Heaven on Earth) and the 2017 Raphaël Monnier ‘One Shot’s

I done a Michelin once
Switched to Goodyear after that

Boracay in the Philippines its gone like Marbella in the 80/90’s


But but but
Its supposed to just be Beaches…

I had a trip to Ph way back and a choice between Cebu & there was v happy with Cebu & quiet beaches on opposite side of Island from the City

It has got beaches looking one way its like the round the Island race from the exotic vantage point of Lepe beach.

My Dougless Bader impression but with out the airplane

The Tuk-Tuk is dead in Boracay they have removed all the moterbike with engines with electric ones so the are now Wee-Wees the sound of an electric motor

Theres nothing wrong with the smell of good old Esso Blue
